Japanese pancakes

A few weeks ago I was at the Milton Markets in Brisbane and ordered delicious Japanese pancakes from one of the stallholders, who made them with chicken teriyaki and avocado.

It seemed amazing that something with so much cabbage could taste so good.

Savoury Japanese pancakes, more correctly known as Okonomiyaki, contain a variety of ingredients in a wheat-flour-based batter. The name is derived from the words okonomi, meaning “how you like” or “what you like”, and yaki meaning “cooked”.

The extras and toppings vary by region and according to personal taste.
